Cauliflower, Spinach Mashed “Potatoes”

Instructions

  1. Steam cauliflower and garlic about 8 to 10 minutes or until tender.
  2. Drain and press out as much water as possible in strainer.
  3. Place in a high-powered blender or food processor. 
  4. Steam spinach until just wilted and set aside.  5, Blend cauliflower, garlic, cashew butter, VegiZest and nutmeg until smooth and creamy. 6 Add non-dairy milk if needed to adjust consistency.
  5. Stir in wilted spinach.
