Chipotle Butternut Cheesy Sauce

This is the best vegan cheese sauce I’ve tasted, and the book (above) is fantastic in general!
Ingredients
- 1 small butternut squash
- 1/2 cup small cashews
- 1/2 cup nutritional yeast
- 3/4 cup nonsweetened plant milk
- 2 tbsp freshly-squeezed lemon juice
- 1 tbsp low-sodium tamari
- 1/2 - 3/4 tsb ground chipotle powder
Instructions
- Preheat the overn to 375
- Line a baking sheet with parchment paper or a silicone baking mat
- Place the squash on the prepared baking sheet (whole)
- Roast until the skin is brown and bubbling, 20 - 40 minutes
- Once it is cool enough to handle, peel, remove the seeds, and measure out 1 1/2 cups roasted squash
- In a blender, pulse the cashews and nutritional yeast until powdered, 10 - 20 seconds
- Add the cooked squash, plant milk, lemon juice, tamari, and chipotle powder.
- Puree until smooth, about 60 seconds
