Chipotle Butternut Cheesy Sauce

This is the best vegan cheese sauce I’ve tasted, and the book (above) is fantastic in general!

Ingredients

Instructions

  1. Preheat the overn to 375
  2. Line a baking sheet with parchment paper or a silicone baking mat
  3. Place the squash on the prepared baking sheet (whole)
  4. Roast until the skin is brown and bubbling, 20 - 40 minutes
  5. Once it is cool enough to handle, peel, remove the seeds, and measure out 1 1/2 cups roasted squash
  6. In a blender, pulse the cashews and nutritional yeast until powdered, 10 - 20 seconds
  7. Add the cooked squash, plant milk, lemon juice, tamari, and chipotle powder.
  8. Puree until smooth, about 60 seconds
