Double Cornucopia

Ingredients
- 8 frozen half corn cobs
- 2 cups low-sodium vegetable stock
- 1 large onion, peeled and chopped
- 1 clove garlic, peeled and minced
- 2 sticks celery, sliced
- 1 jalapeno, diced
- 1 bell pepper, diced
- 1 16oz can diced tomatoes
- 2 teaspoons hot sauce
- juice of 1/3 small lemon
- 2 teaspoons baking cocoa
- 1/2 tsp ground table pepper
- 1/2 teaspoon paprika
- 1/3 tsp ground raw cumin
- 1/3 tsp ground coriander seed
- 1/3 tsp ground oregano
- 2 cups of Textured Vegetable Protein (“soy crumbles”) Optional
Instructions
- Saute onions garlic and spices
- Add all ingredients to an Instant Pot
- Pressure cook for 15 minutes
