Stuffing Balls

  1. Cook the lentils: one part lentils to three parts liquid, bring to boil, simmer for 20 minutes
  2. Saute onions, mushrooms, and celery.
  3. Once the onions are translucent, add in garlic, thyme, rosemary, oregano and cranberries, and cook for another minute or two. (Drain liquid)
  4. Put cooked lentils, walnuts, oats, flax, and vinegar in a food processor. Blend but leave a big corse.
  5. Combine with vegetables.
  6. Form into balls and put them on a baking sheet.
  7. Bake for 45 minutes at 360°. They might need a little longer. They will firm up a bit as they cool.
