Sweet Potato and Fennel Stew

Ingredients
- 5 cups low sodium or no-salt-added vegetable broth
- 2 cloves garlic, chopped
- 1 leek, cleaned well and chopped
- 2 tablespoons chopped fresh thyme
- 1 cup frozen chopped spinach or 10 ounces fresh spinach
- 2 medium sweet potatoes, cut into 2” pieces
- 1 small fennel bulb, chopped
- 2 tablespoons fresh fennel fronds, finely chopped
- 2 cups chopped broccoli
- 1 cup chopped carrots
Instructions
- Pour broth into a large pot and bring to a boil.
- Add garlic, leek and thyme.
- Reduce to a simmer and add remaining ingredients.
- Cook covered until vegetables are tender, about 20 minutes.
- Serve stew hot garnished with fennel fronds or thyme.
Note: Add more vegetable broth if desired, to adjust consistency.
