Sweet Potato Black Bean Burgers

Ingredients
- 1/3 cup raw cashews
- 1/3 cup raw pecans
- 1/2 cup dried black beans (cooked) = 1 1/2 cup cooked black beans
- 3/4 cup baked sweet potato, mashed (prick with fork; back 1 hour at 400 degrees)
- 1/2 cut diced red onion
- 1/2 jalapeno pepper, deseeded and diced
- 3 tablespoons chopped cilantro
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 tablespoon cider vinegar
- 2 tablespoons fresh lime juice
- 3 tablespoons nutritional yeast
- small amount of cooking spray
Note: instead of cooking spray, I but a silicone mat on baking trays
Instructions
- Preheat oven to 350
- Place nuts in food processor and grind to a fine powder.
- Add remaining ingredients and pulse to combine.
- Form mixture into burgers, place on sprayed baking pan, and bake for 30 minutes.
Serve with avocado, tomato, and red onion slices.
