Veggie Wraps

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place sweet potatoes on a non-stick cookie sheet and sprinkle with garlic and onion powder.
  3. Bake approximately 45 minutes, turning potatoes every 15 minutes or until tender and lightly browned. 
  4. Using a fork, mash avocado with chopped onion, lime juice and cumin.
  5. Spread avocado mixture on wraps.
  6. Place sweet potatoes, carrots, spinach and non-dairy cheese on top and roll up.

Eat as is or lightly brown on both sides and slice in two.
